THE Holland America Line Culinary Council has taken on a new focus, with the company giving each of its seven members a dining experience to “enhance and elevate”.
The Council embarks on its new task with a fresh face, following the addition of sushi chef Andy Matsuda (pictured).
Matsuda will lead sushi offerings in Lido Market as well as the sushi menu available in Tamarind on select ships.
Chair of the council Rudi Sodamin will oversee all aspects of onboard dining and lend his expertise to Rudi’s Sel de Mer.
Other members of the council include Jonnie Boer who will bring his restaurant, De Librije, on board select sailings through Taste of De Librije evenings in Pinnacle Grill.
David Burke will enhance the menu at Pinnacle Grill while Elizabeth Falkner will introduce lighter fare to venues across the fleet.
Ethan Stowell will introduce several of his recipes at New York Pizza and select Lido Market stations and Jacques Torres will guide HAL’s chocolate desserts.
HAL has also recruited wine critic James Suckling to review and curate a new wine list to be rolled out across the fleet by the end of 2018.
